sticky rice dumplings
Recipe
- 1 packaging of banana leaves, fresh or frozen (if frozen, thaw for at least 1 hour)
- 2 cups Thai sweet rice (also known as "sticky rice", available at Asian/Chinese food stores)
- 3 3/4 cups water
- 1/4 teaspoon of salt
- 2 boneless chicken breasts, cut into bite-size pieces or smaller
- 1 tsp. cornstarch stirred into 3 teaspoon soy sauce
- 1 cup fresh shiitake mushrooms, diced
- 1 thumb-size piece galangal or ginger, grated or cut into matchstick pieces
- 1/4 cup white wine or sherry (or cooking wine/sherry)
- some toothpicks, twine, satay sticks, or string to secure the dumplings
- Stir fry sauce:
- 1 teaspoon of fish sauce
- 1 teaspoon of brown sugar
- 1 thumb-size piece galangal (or ginger), peeled and grated
- 1 red chilli, thinly sliced (seeds removed if you prefer milder dumplings) OR 1-3 teaspoons of chili sauce
- 1 teaspoon of lime juice
- 1 teaspoon of dark soy sauce
- 1 teaspoon of oyster sauce
- Other: oil for stir-frying
- Place the water in a pot and add the Thai sweet rice. Stir and allow to sit for at least 20 minutes. (Sweet rice has a hard outer shell that needs to soften before cooking.) In the meantime, prepare the chicken, mushrooms, sauce, and other ingredients for stir-frying.
- After 20 (or more) minutes, add 1/4 tsp. salt and give the rice another stir. Place the pot over high heat. When rice-water comes to a bubbling boil, reduce heat to medium-low (around 2.5 on the dial), so that rice-water continues to boil gently.
- Place a lid askew so that it is 3/4 covering the pot (while allowing some steam to escape). Cook like this for 10 minutes, or until all (or most) the rice-water has been absorbed.
- Now turn off the heat and cover completely with lid. Allow to sit for 10 minutes. If you're planning to make the dumplings immediately, place the pot in the refrigerator to cool.
- Mix 1 tsp. cornstarch with 3 Tbsp. soy sauce until cornstarch dissolves. Pour over chopped chicken breasts in a small mixing bowl. Stir well and set aside.
- Place a wok or large frying pan over medium-high heat. Add 1 Tbsp. oil and swirl around, then add the galangal (or ginger). Stir-fry 30 seconds. Now add the chicken (together with the soy sauce/cornstarch). Tip: As you stir-fry, add 1 Tbsp. wine or cooking wine (instead of more oil) whenever the wok/pan becomes dry. After about 2 minutes (or when chicken is cooked), add the mushrooms and stir-fry another 1-2 minutes, or until mushrooms have softened.
- Add the stir-fry sauce and turn heat down to low while you stir it in. Do a taste-test, adding more lime juice if too salty for your taste, more sugar if too sour, or more fresh chili (or chili sauce) if not spicy enough. If too spicy, don't worry - the spice will be tempered later by the plain-tasting rice surrounding it. Turn off the heat and set aside to cool.

Sundubu jjigae

- dried anchovies

Then heat the pot, and then chop the beef put them in the pot. Put 1 ts olive oil, ready for mixed seafood package, shrimp, su bu bu(soft tofu), eggs, green chili pepper and green onion. Third took out cooked mushroom and chop them, put them into the pot churn it. Use 2 TBS for mild and 5 TBS for suicidal. Put 2 cups of stock in churn it again and let it boil. Chop the green onion and green chili pepper, and then put seafood, 2 TBS of fish sauce and chopped soft tofu in the pot.( If you like you can put some shrimp in), and then put chili peppers and green onions in the pot. At last wait for it boiled and put some sesame oil in.

- 1 lb. Miki Lucban
- 1/2 lb. pork belly thinly sliced and chopped
- 4 to 5 cups beef broth
- 1/2 lb. shrimp, cleaned
- 1/4 lb. pig’s liver, sliced
- 1 piece chayote, sliced
- 1 cup bok choy (or pechay), chopped
- 1 cup snap pea or snow pea
- 3/4 cup shredded carrots
- 1 medium onion, sliced
- 5 cloves garlic, crushed
- 4 tablespoons cooking oil
- 5 tablespoons soy sauce
- 1/2 teaspoon ground black pepper
- Banana leaf, cleaned and cut into 5 x 5 inch piece
Heat 3 tablespoons of cooking oil in a wide cooking pot.
Stir-fry the chayote, snap pea, carrots, and bok choy for 3 to 4 minutes. Set aside.
On the same cooking pot, add remaining oil. Put-in the pork slices. Cook for 5 minutes or until the oil from the pork comes out.
Put-in the onion and garlic. Cook for 2 minutes.
Add the liver. Stir.
Add the shrimp. Cook each side for 1 minute. Remove the shrimp and then set aside.
Sprinkle the ground black pepper and pour-in soy sauce.

Cajun French Fries
Recipe
- Canola Oil, enough to fill pot with 3 inches of oil
- Cajun Seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried Oregano
- 2 large russet potatoes
- Sugar water
- 2 cups cold water
- 1/3 cup granulated sugar
1. Heat oil in Dutch oven or large pot until temperature reaches 350 degrees F.
2. Place cajun seasonings into small bowl and mix to combine.
3. Cut potatoes into desired thickness. Place water and sugar into a large bowl, mixing until dissolved. Transfer potatoes into water and soak for 30 minutes. Transfer to a paper towel lined plate to dry, 5 minutes.
4. Carefully drop potatoes into oil and fry until golden, for 2 to 3 minutes. Remove and transfer to a paper towel lined plate. Right before serving, fry potatoes a second time for 2 to 3 minutes. Remove and transfer to a paper towel lined plate. Immediately sprinkle with pinches of Cajun seasoning. Serve immediately.Makes 2 to 4 servings

Nishime
Recipe
- 8 satoimo (taros or eddoes)
- 1 section (about 5″) lotus roots
- 1 package of vacuum packed bamboo shoots
- 1/2 burdock
- 1 konnyaku (see cutting technique video)
- 1 grilled or fried tofu
- 2 carrots
- 2 cups snap peas
- 3 cups dashi*
- 3 tbsp soy sauce*
- 2 tbsp sugar*
- 1/2 tsp salt*
- 1 cup dashi^
- 1 tsp sugar^
- a pinch of salt^
Wash satoimo (taros or eddoes) and peel the skin. Watch video for the peeling technique. Boil the peeled satoimo about 10 minutes and set them aside.
Wash a section of lotus root and peel the skin with a peeler. Slice it in 1/4", boil about 10 minutes, and set them aside.
Wash carrots and peel them. Slice them in 1/4", boil about 10 minutes, drain, and set them aside. 2 Snip the ends of snap pees and boil 2~3 minutes. Drain and set them aside.
Grilled tofu or fried tofu is cut in bite size, put them in a colander, and pour boiling water over them. Set them aside.
Cut konnyaku (see konnyaku cutting instruction video), put them in a colander, and pour boiling water over them. Set them aside.
Burdock will be scrubbed with a vegetable scrubber, diagonally sliced, and soak in cold water for about 10 minutes, and drain.
Boiled bamboo shoots are cut in wedges. 3 Put all vegetables except carrots and snap peas in a large pot. Add * marked ingredients, drop an otoshibuta, and cook over medium heat. When boiled, turn down the heat to simmer for about 2 hours. After 2 hours, turn off the heat and let the pot cool down in room temperature.
While cooking the other vegetables, combine ^ marked ingredients in a small pot over medium heat. Put the boiled carrots and snap peas in a bowl, and pour the hot combined liquid over the carrots and snap peas. Leave it to cool down.
When vegetables are cooled down, store soy sauce stewed vegetables in one container, and carrots and snap peas in another container, both with cooking liquid.
Before serving, bring the vegetable back to the room temperature. Take out from the cooking liquid and display nicely on a large tray or bowl
